When picking up a quest, make sure it’s either green or yellow. The gray ones are below your level and not worth the time while the red ones means that they are too hard for your level, always abandon gray quests because you’re not going to level down, keep the red ones if you got enough space for it in your quest log.

When you finish the quest, you can disenchant the item you’re getting if it’s in no use for you (leather to mages, mail to rogues etc.) or sell it on the Auction House if it’s Binds on Equip.
